Through his professional career, Mathieu has gained extensive knowledge and experience in gastronomy. He started his career in Lyon (France) as a commis chef and worked in several cities and countries around the world, exploring the skills, gastronomy and culture of each one, either as a team member or as a private chef, including France, the United Kingdom, Japan, and Ireland. He currently holds the Executive Chef title at the newly established Joël Robuchon Restaurants at Ayia Napa Marina in Cyprus.
